The livin’ may be easy, but only if you have air-conditioning! Temperatures over 90 degrees coupled with high humidity drains ya. The garden loves it, though. The zucchini vines are poppin’ out those blossoms like firecrackers. The corn is tasseling, the green beans are growing, and the tomatoes are going nuts. That’s good-I love fresh tomatoes.
Recipe for fresh tomato salsa:
Wash a bunch of tomatoes, a lot if you love salsa, not many if you’re not as wild about it. Put them in a food processor with some onion and garlic (the garlic can be fresh or powdered, fresh is best, of course.) If you like spiciness, add some hot pepper. If you like cilantro, throw in some fresh washed cilantro. Chop either coarse or fine, depending upon your taste. Salt with some Celtic sea salt, season to taste.. Molto bene!
